INGREDIENTS:

SPICY BANANA PEPPER MAYO:

  • 1 cup mayo
  • ¼ cup pickled banana peppers, finely chopped
  • 1 tbsp red onion, finely chopped
  • 1 tbsp pickle or banana pepper juice
  • 1 tbsp hot sauce
  • 1 tsp fresh or dried dill

SANDWICH:

  • 4 brioche hamburger buns, toasted
  • butter lettuce leaves
  • tomato slices
  • pickles

PREPARATION: Serves 4

  1. Prepare the spicy mayo:
  2. In a small bowl, combine the mayo, chopped banana pepper, onions, pickle juice, hot sauce and dill.
  3. Mix well to combine and refrigerate until ready to use.
  4. Marinate the alligator:
  5. Season the sliced alligator with ½ teaspoon of the pickle seasoning and Cajun seasoning, and 1 teaspoon each of the boil boaster and trinity shake.
  6. Once the sliced alligator is seasoned, place the meat in a plastic bag and pound it to tenderize the meat and for a uniform thickness.
  7. Next, pour in the pickle juice and hot sauce and let marinate in the refrigerator for 30 minutes or up to overnight.
  8. Prepare the breading:
  9. In a shallow dish, combine the flour, cornstarch and the remainder of the seasoning and mix well.
  10. Fry the alligator:
  11. Heat the vegetable oil in a deep fryer or skillet to 350F
  12. Remove the alligator pieces from the marinade.
  13. Dredge the alligator pieces in the breading mixture, ensuring they are evenly coated.
  14. Fry the alligator pieces in batches until golden brown and crispy, about 4-5 minutes per side.
  15. Remove and drain on a wire rack or paper towels.
  16. Assemble the sandwich:
  17. Spread a generous amount of the spicy banana pepper mayo on the bottom and top of each toasted bun.
  18. Add lettuce leaves, tomato slices and pickles.
  19. Place the fried alligator pieces on top.
  20. Assemble the sandwich and serve immediately.
