INGREDIENTS:
- 1 pound alligator meat, sliced into ½-inch steaks
- ½ cup pickle juice
- 2 tbsp hot sauce
- 1.5 tsp pickle seasoning
- 1.5 tsp of Cajun seasoning
- 2 tsp of Louisiana Fish Fry Products Garlic Smash Boil Booster
- 2 tsp of Louisiana Fish Fry Products Trinity Shake
- 1.5 cups all-purpose flour
- 2 tbsp cornstarch
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Vegetable oil for frying
SPICY BANANA PEPPER MAYO:
- 1 cup mayo
- ¼ cup pickled banana peppers, finely chopped
- 1 tbsp red onion, finely chopped
- 1 tbsp pickle or banana pepper juice
- 1 tbsp hot sauce
- 1 tsp fresh or dried dill
SANDWICH:
PREPARATION: Serves 4
- Prepare the spicy mayo:
- In a small bowl, combine the mayo, chopped banana pepper, onions, pickle juice, hot sauce and dill.
- Mix well to combine and refrigerate until ready to use.
- Marinate the alligator:
- Season the sliced alligator with ½ teaspoon of the pickle seasoning and Cajun seasoning, and 1 teaspoon each of the boil boaster and trinity shake.
- Once the sliced alligator is seasoned, place the meat in a plastic bag and pound it to tenderize the meat and for a uniform thickness.
- Next, pour in the pickle juice and hot sauce and let marinate in the refrigerator for 30 minutes or up to overnight.
- Prepare the breading:
- In a shallow dish, combine the flour, cornstarch and the remainder of the seasoning and mix well.
- Fry the alligator:
- Heat the vegetable oil in a deep fryer or skillet to 350F
- Remove the alligator pieces from the marinade.
- Dredge the alligator pieces in the breading mixture, ensuring they are evenly coated.
- Fry the alligator pieces in batches until golden brown and crispy, about 4-5 minutes per side.
- Remove and drain on a wire rack or paper towels.
- Assemble the sandwich:
- Spread a generous amount of the spicy banana pepper mayo on the bottom and top of each toasted bun.
- Add lettuce leaves, tomato slices and pickles.
- Place the fried alligator pieces on top.
- Assemble the sandwich and serve immediately.
