Get rid of the slime

Slime on the outside of fish is expected, but it’s just nasty when fillets are coated with slime on the cleaning table.

Capt. Marty LaCoste has resolved that problem by simply making an ice slush in a bucket. When he removes a fillet, it’s dropped into that buck instead of left on the cleaning table.

“It cools the meat and prevents it from getting slimy,” LaCoste said.
